This southern Italian classic is a staple around many holiday tables & it’s a fairly simple recipe to prepare!
- 2 whole artichokes
- 1 cup Bread Crumbs
- 2 Garlic cloves, minced
- 1⁄4 cup Green Olives, slices
- 3 Tbsp Capers
- 1⁄4 cup White Wine
- 2 Chopped Tomatoes
- 1 cup Chicken Stock, fat free, reduced sodium
- Prep artichoke: remove stem and cut the top 2 inches off of artichoke. Then begin loosening the leaves open, this will make room for the stuffing. Place artichokes in boiling water for 30 min, covered. Be sure to wash your hands after this step!
- In a pan heat 2 oz oil add garlic, green olives, capers and tomatoes cook for 5 min. Add white wine and chicken broth. Allow mixture to cook for about 5 more minutes and pour over artichoke.
