Looking for a quick side dish for your holiday table? With just a little chopping & seasoning you’ve got a delicious flavorful side that pairs great with chicken, turkey or pork.
- 1 medium butternut squash, peeled, seeded and cut into 1 inch pieces (about 2 1/2 cups) or 1 package of pre-cut butternut squash cubes
- 1 large gala apple (unpeeled)
- 1/2 large onion
- 1/4 c water
- 2 tbsp olive oil
- 1/2 tsp garlic powder
- 1/2 tsp nutmeg
- 1 tsp cinnamon
Place squash, apples and onions in a bowl and toss with olive oil to cover. Season with garlic powder, nutmeg and cinnamon. Pour into baking dish and add water. Cover with foil and bake at 350 degrees for 45 mins or until tender. Serve as a side dish with chicken, turkey or pork.
