Lobster Bisque | Recipe

A creamy Lobster Bisque is the perfect start to your holiday meal. Guests go wild for this rich, flavorful soup. Village Super Market’s head chef shares his recipe and a few tips for a mouth-watering Lobster Bisque!


Lobster Bisque

Chef Tip: Instead of Vegetable stock use a shrimp or fish stock

THE INGREDIENTS: 

  • 12 oz lobster meat, cooked
  • 1/2 cup shallots, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup potatoes
  • 1 qt heavy cream
  • 4 oz butter
  • 8 cup stock
  • 1 tbsp thyme
  • 1/4 cup sherry
  • salt and pepper to taste
  • 1/4 cup green onion

DIRECTIONS:

  1. In a pot heat butter, add onion and celery, then sweat
  2. Add potatoes and cook for 5 min
  3. Add sherry then flame
  4. Add cream and stock simmer
  5. Add thyme and lobster, cook until potatoes are tender
  6. Salt and pepper to taste
