1 cup Whole Wheat Pancake Mix
4 Eggs, of egg substitute equivalent
3 cups of Broccoli florets, grated
3⁄4 cup Pecorino Romano cheese, grated 1⁄4 cup Vegetable Oil
1 Small onion, grated
1⁄2 Tbsp Parsley, Gourmet Garden
- Preheat oven to 350 F. Spray cupcake tins with Pam.
- Combine the pancake mix and eggs together until uniformly mixed. Then add in broccoli,
cheese, oil, onion and parsley.
- Fill each cupcake tin 3⁄4 the way full. Bake for about 30 minutes, insert fork into middle of
one, check removed fork. If the fork is clean, the quiches are ready!
Helpful Hint: To reheat, place quiche in a microwave safe bowl and cover with a damp paper towel, microwave 10 seconds on each side.
