Broccoli Quiche Muffins | Recipe

Breakfast Quiche Muffins
Prep Time: 5 Minutes      Cooking Time: 30 Minutes      Serves: 12


1 cup Whole Wheat Pancake Mix
4 Eggs, of egg substitute equivalent
3 cups of Broccoli florets, grated
3⁄4 cup Pecorino Romano cheese, grated 1⁄4 cup Vegetable Oil
1 Small onion, grated
1⁄2 Tbsp Parsley, Gourmet Garden


  1. Preheat oven to 350 F. Spray cupcake tins with Pam.
  2. Combine the pancake mix and eggs together until uniformly mixed. Then add in broccoli,

    cheese, oil, onion and parsley.

  3. Fill each cupcake tin 3⁄4 the way full. Bake for about 30 minutes, insert fork into middle of

    one, check removed fork. If the fork is clean, the quiches are ready!

Helpful Hint: To reheat, place quiche in a microwave safe bowl and cover with a damp paper towel, microwave 10 seconds on each side.
