Black Bean, Mango & Corn Salsa | Recipe


  • 1 (14-ounce) can ShopRite Organic Black Beans, drained and rinsed
  • 1 ¼ cups corn kernels (from 2 ears of corn)
  • ½ cup chopped mango (about 1 mango)
  • 1 cup chopped tomato
  • ½ cup chopped red onion
  • ½ cup finely chopped cilantro
  • 2 tablespoons fresh lime juice (the juice of 1 lime)
  • 1 teaspoon cumin
  • Salt and pepper, to taste

*To add some heat, add 1 chopped jalapeño pepper or ½ teaspoon cayenne pepper


  1. Combine all ingredients in a large mixing bowl.
  2. Toss to combine.

Serve as a dip with chips or over baked Cod or Tilapia
