Pumpkin Pie Bites
- 1 ½ cup Oats
- ½ C. Pumpkin Puree
- ¼ cup Almond Butter
- 2 T. Sliced Almonds
- ¼ cup Raisins
- 1 T. Honey or Maple Syrup
- 2 tsp. Pumpkin Spice (Cinnamon + Nutmeg + Ginger)
- Unsweetened Coconut Flakes (optional for rolling)
- Combine everything in a bowl.
- Cover a plate or baking sheet in wax paper. Roll into about 30 balls and place on paper.
- Put them in the freezer for about 20 minutes to firm up, and remove when you need a refuel!
